Summer Carrot Coleslaw

A healthier twist on your classic coleslaw, this vegan summer slaw is great for barbecues and backyard cookouts. It’s salty, sweet, and crunchy and comes together in less than 15 minutes.

Summer Carrot Coleslaw Recipe

Prep Time: 15 minutes | Total Time:  15 minutes | Servings: 4-6

INGREDIENTS

 Slaw

  • 2 cups carrots, shredded

  • 5 cups green cabbage, shredded

  • 2 cups red cabbage, shredded

  • ¼ cup sesame seeds

  • ¼ cup hemp seeds

Dressing

  • ½ cup tahini

  • 2 tbsp maple syrup

  • 2 tbsp tamari

  • 1 tbsp Dijon mustard

  • 1 tbsp nutritional yeast

  • 2 tbsp apple cider vinegar

  • 2 tbsp water

  • 1 tsp sea salt

 
INSTRUCTIONS

 1.     In a small bowl, whisk together the dressing ingredients.

 2.     Combine the carrots and cabbage to a large mixing bowl. Pour the dressing over and stir to combine. Add salt as needed.

 3.     Serve immediately or refrigerate for up to 30 minutes.
