It took me some time to get into tofu. I didn’t have the somewhat typical reaction of finding it difficult to eat, I just didn’t know how to really prepare or cook it. I’d buy it occasionally and throw it on a pan and hope for the best. And the best is definitely not what I got. When working with tofu, you need to learn some things before choosing 350 degrees and crossing your fingers. Once you do that, the possibilities are endless. I think one of the best things about learning how to cook tofu is that it’s really a healthy, inexpensive way to add plant-based nutrition to your diet. Here are 4 delicious tofu recipes that will show you why it deserves the top spot on your next grocery list.

Vegan Buffalo Tofu Wings

If you like buffalo sauce, tofu + buffalo sauce = delivers and then some! My main way of preparing tofu now is to marinate it with Primal Kitchen’s No-Dairy Buffalo Sauce and it consistently comes in as #1 out of all of my meals. This Vegan Buffalo Tofu Wings recipe from Shane & Simple is a great way for beginners to test the tofu waters. Made with a healthy version of buffalo tofu wings, covered in a crunch panko bread crumb mix, this works well for a tasty and filling lunch.

Right now I'm in a stage of eating tofu and rice (with pineapples—a must!) on the regular and it works really well for my body. This dynamic recipe is made with perfectly stir-fried veggies, pineapples, and a simple sweet and savory tamari sauce. BBQ Sweet Potato Tofu Tacos

Ever had red cabbage in a taco? I don’t know what it is about it — whether it’s simply because it makes it so pretty or that it adds the perfect flavor, but somehow red cabbage makes a taco. This BBQ Sweet Potato Tofu recipe by From My Bowl is made with tofu, sweet potatoes, and a colorful lime-cabbage slaw. Overall, you only need 10 ingredients and less than 30 minutes to make this hard-to-beat plant-based dish.

Fluffy Tofu Pancakes

There are multiple ways to make plant-based pancakes. But using silken tofu gives you soft, fluffy pancakes that come with the added benefit of the protein, calcium, and iron that tofu is known for. This recipe for Tofu Pancakes from Anna Banana is a great way to give them a try. Top them with anything you like, from chocolate to berries and of course, your favorite maple syrup. Take it up a notch by adding some tempeh bacon and a tofu scramble for a totally vegan big breakfast.
