Balsamic Roasted Brussels

There’s a reason parents always want kids to eat their Brussels sprouts. They’re packed with fiber, antioxidants, vitamin K, and vitamin C. They may also help with bone growth, support stable blood sugar levels, and help reduce inflammation. They’re powerful little cruciferous veggies.

This is a fun and flavorful way to brighten up your brussels sprouts! These brussels sprouts pair well with winter harvest bowls or served up as a veggie side, that anyone will enjoy.

Balsamic Brussels Sprouts Recipe

Prep Time: 10 minutes | Cook Time: 10 minutes | Total Time:  20 minutes | Servings: 12

INGREDIENTS 

  • 1 lb Brussels sprouts, halved

  • 2 garlic cloves

  • ¼ cup balsamic vinegar

  • ¼ cup maple syrup

  • 1 tbsp Dijon mustard

  • ¼ cup olive oil

  • 1 tsp salt

INSTRUCTIONS

1.     Preheat the oven to 400 degrees. Clean and prepare your brussels sprouts, adding them to a medium bowl.

 2.     In a high-speed blender, prepare your balsamic glaze dressing: combine the garlic cloves, balsamic vinegar, maple syrup, Dijon mustard, olive oil, and salt and emulsify until smooth.

 3.     Pour the balsamic dressing over the brussels sprouts and mix to combine. Spread them onto a baking sheet and place into the oven to roast. 

 4.     Roast for 20 minutes, remove from oven, and rotate the Brussels. Place back into the oven and roast for another 5-10 minutes depending on how crispy you want them.

 5.     Once roasted, remove from the oven and allow to cool before serving. Enjoy!
