Grilled Portobello Veggie Kabobs

There’s still time to enjoy grilled veggies and backyard BBQs. This grilling recipe is great for hot summer nights. and the cool early evening of fall. These kabobs are the perfect accompaniment to your favorite burger or make them a meal – add grilled corn and a summer salad. They come together super-fast and are an easy excuse to make a healthy meal!

 Grilled Portobello Veggie Kabobs Recipe

 Prep Time: 5 minutes | Cook Time: 25 minutes | Total Time: 30 minutes | Servings: 4 - 6

INGREDIENTS

  •  1 yellow onion

  • 1 red onion

  • 1 medium red bell pepper

  • 1 medium orange/yellow bell pepper

  • 1 medium green bell pepper

  • 1 zucchini

  • 1 yellow squash

  • 4 large portobello mushrooms

  • 2 tbsp avocado oil

  • 1 tsp sea salt

 INSTRUCTIONS

1.     Start by preparing your vegetables for the skewers – chop into medium/large pieces and arrange on your skewers. Brush them with a bit of avocado oil and lightly salt.

 2.     Heat up your grill. Assemble your skewers on the grill and cook until tender or lightly browning. Rotate your skewers every few minutes to make sure they cook evenly.  

3.     While your skewers are grilling, prepare your dipping sauce or other menu items. Dipping sauce may include chimichurri sauce, BBQ sauce, pesto, avocado sauce, or any of your favorites.

4.     Once your skewers are finished, drizzle with your dipping sauce and enjoy!
